Ingredients

Cookies

  • 67g nonfat plain Greek yogurt
  • 64g granular swerve
  • 1 egg
  • 30g oat flour
  • 1 tsp cake batter extract
  • 22g coconut flour
  • 1 scoop protein powder (I used 1/2 scoop Legion whey+ and 1/2 scoop Legion casein)
  • 1/2 tsp baking soda
  • pinch salt
  • sprinkles

Frosting

  • 170g nonfat plain Greek yogurt
  • 11g vanilla Legion protein powder
  • 1/4 cup powdered swerve
  • 1/2 cake batter extract

Instructions

  1. Preheat oven to 350°F
  2. Mix ALL ingredients together then scoop in 3 balls (or however you want to make)
  3. Bake for 10–11 minutes (do not over bake)
  4. Mix frosting ingredients together, and once the cookies are cooled, spread equal amount of frosting onto each cookie.
  5. Top with sprinkles
