If you, like myself, prefer simplicity in a pan for a breakfast then this is a good choice for a fast and efficient meal. I use these a lot as I drive to work early and I need something that I can prepare ahead and microwave either before I leave or once I am at work in the microwave.
These loafs are very filling and focused on protein and long energy via fat over fast energy through carbs.

Ingredients (PER TIN)
- 1 whole egg
- 1/3 cup egg beaters (or egg whites)
- 1/3 cup low fat cottage cheese
- 1/4 cup low fat cheddar cheese
- 1 Jimmy Dean fully cooked turkey sausage patty
- 20g deli ham
- 1/2 tbsp bacon bits
- Pinch of Salt and pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Directions
- Brush Mini tins (or glass) with olive oil or butter
- Combine whole egg, egg whites, cottage cheese, cheese, and seasonings together using a fork. (Or if doing multiple loafs use a blender)
- Add chopped turkey patty, torn ham, and bacon bits. Mix one more time.
- Bake at 400 degrees F for 30-35 minutes.
- Store in refrigerator for up to 4 days or freeze until later use!
(NOTE: when reheating, TAKE OUT of the tin foil container, place on a plate, and reheat)
